Were they sheep? Deer? I don’t really recall. It could also serve as a stand-in for animals in general, or relate to the sausage vendor that iirc was in the town square.
On another line of thought there’s the Monkey Island “you fight like a cow” type stuff, but where the cars, clocks, trees etc. make sense for GK2 it doesn’t for MI.
Drat, I should’ve pulled a @Sushi on that one. Never heard of it though.

Hm… Okay. So the cows are those from the intro…
Huh, I think you just might be right. But GK2 also had a bathroom with a rug and everything! Time was also rather important in GK and GK2. It’s not like it was a terrible fit. I’m not convinced the cow makes that much more sense for DoTT than for GK2 anyway.
