While, here… the first course for tonight is lasagne, which are under the silver foil. They’re defrosting (we made them last week). The second course will be the braised beef with polenta (still to be made)
And The pie is for dessert.
I haven’t made good experiences with defrosted Lasagne. How do you keep it “juicy” after/during reheating it?

That sounds a bit like daube of beef, which I had in Nice. It’s traditionally served with gnocchi, which worked really well. I imagine having it with polenta is similar.

You have two possibilities:
The first one is better, and suitable if you are preparing lasagne but you’re gonna freeze them and you’re not eating immediately.
It consists in freezing the thing half-cooked, so that you complete Your cooking after defrost. Let defrost gently (room temperature) for the best results.
The second choice is to warm up your frosted lasagne in a microwave and not in a traditional oven, to avoid drying them too much.

Anyway you can just refrigerate your cooked lasagne and put them in a plastic box. They will preserve for 4 to 7 days.
I, for instance, like re-heated lasagne more than the fresh thing.
Anyway, still the microwave is important for re-heating, since you dry them if re-heated in a traditional oven…
